34-year-old women in Da Nang determined to put Quang noodles on culinary map of the world

After Pham Thi Tuyet, hailing from Quang Nam Province, finished as a runner up at the 'MasterChef Viet Nam 2015 ' cooking contest, she has nurtured a dream of promoting My Quang (Quang Noodles) - one of Da Nang best foods - to culinary map of the world.

Tuyet was born and grew up in Dien Ban Town, Quang Nam Province. The 34-year-old women said that, in her childhood memories, the image of her parents holding sets of Quang Ganh (consist of a bamboo pole and two baskets made from different materials like bamboo) to sell Quang Noodles has become ingrained in her subconscious mind.

In addition, basic steps for cooking bowls of Quang Noodles, from how to choose fresh ingredients to cook a distinctive broth made from a secret recipe, are all too familiar to her.

After bagging the runner up title in the 'MasterChef Viet Nam 2015 ' cooking contest, Tuyet had the opportunity to travel to many countries around the world, and explore their different cultures, and experience their best foods.

So, after resettling in Da Nang, the passionate woman decided to open a Quang Noodles restaurant, called 'the ' Nu Do Kitchen' right at her home. Set in an alley No 1/11 on Luu Quang Thuan Street in Ngu Hanh Son District's My An Ward, the ' Nu Do Kitchen' has become a perfect place for her to develop her interest in cooking and turn it into her career.

Sharing the reason for choosing Da Nang to open the ' Nu Do Kitchen', Tuyet remarked, more recently, Da Nang has emerged as an inviting destination for both domestic and international tourists, so the city is an ideal place for me to spread my love for the cuisine of my hometown, especially Quang Noodles, to people from both home and overseas.

Tuyet underlined that during the process of cooking Quang Noodles, she often tells her customers about her this dish-related feelings and stories, hereby spreading inspiration to customers and making them be more curious about this rustic local food.

Since its operation in September 2019, the 'Nu Do Kitchen' has become a familiar address for many tourists, especially foreigners.

Tuyet and some of her international friends who are working for Da Nang-based Italian and French restaurants have made every effort to make the 'Nu Do Kitchen' a popular destination for all of foodies.

"As Da Nang braced for two waves of coronavirus infections in April and late July 2020, I and my foreign friends together cooked more than 1,000 meals to support the frontline medical workers of the 199 Hospital under the Ministry of Public Security" said Tuyet.

In the coming time, she will team up with her international friends to develop a 'food tour' for both domestic and foreign travellers who wanna to explore local cuisine.

Dinh Viet Van Hai, a tour guide in Da Nang said that, visitors to the 'Nu Do Kitchen' will have the opportunity to try Quang Nam-style bowls of Quang Noodles, and listen to amazing stories of that dish.

Dr Nguyen Thi My Thanh, a lecturer of the Faculty of Tourism of the Da Nang University of Economics cum Head of the Da Nang Tourism Occupational Skills Standards Training Club, highlighted Tuyet's idea of serving Quang Noodles in tandem with telling stories of that dish to customers as a way to renew local tourism products, thereby bringing visitors fresh and unique experience.
