In particular, the nationally popular southwestern dish “lau cua dong” (field crabs hot pot) has a unique blend of incredible flavours.  The meat of the field crabs is split off their carapaces and plastrons and then finely ground before being put into the hot pot broth to create a smooth aftertaste!
