Oysters emerged as a culinary delicacy for Da Nang’s gourmets when the city was known as Tourane during French colonial rule.  In the past they have been praised as one of the country’s delicacies by Vietnamese poet Tan Da.  Oysters, also known as shipworms, are marine bivalve molluscs, and many are found living by the piers of the city’s Nam O Bridge.

Local residents usually use the point of a knife to carefully remove the soft, white-textured flesh from the thick shell, which has already been smashed by a hammer in order to ensure the unique taste of the oysters.

Of all the scrumptious dishes made from these saltwater clams, oysters served with salt and pepper is the most popular.  The flesh is first dipped into dilute vinegar, and is then served with a dash of roasted salt, pepper, raw vegetables, and several thinly-sliced lemons.  When trying this delicious dish, customers will experience the amazing mixture of the various flavours.  Nowadays, many gourmets will also drink rice wine to better enjoy the impressive taste of the oysters.

It is said that this kind of seafood is an excellent source of protein, fat, and essential minerals which are very beneficial to the human body.

The Thanh Truc Restaurant is the only place in Lien Chieu District’s Hoa Hiep Nam Ward to serve a wide range of delicious oyster delicacies, including oyster soup, fried eggs, sautées and other dishes served with mustard.  Of all of them, fried eggs with oysters is emerging as the favourite with men.
